This stunning 2-piece set from Shun features 2 of our most popular multi-purpose knives in our Shun Classic line: The 8-Inch Shun Classic Hollow-Ground Chef’s Knife and the 7-Inch Classic Asian Chef's knife (known as a Gyuto knife in Japan). The traditional styling of the Classic 8-Inch Chef’s Knife with hollow-ground or scalloped edge is the perfect go-to-knife for slicing, mincing, dicing-whatever the task. The scalloped edge keeps food from sticking to the blade making cutting tasks quick and easy. The 7-Inch Asian Chef’s Knife is the Japanese equivalent of the Chef's Knife or all-purpose knife. The blade is thinner than the traditional Chef's Knife, but still offers plenty of knuckle clearance when cutting on a board. It is a lighter, more nimble multi-purpose kitchen knife. Both knives are must-haves in your Shun Classic collection. Ultra-thin and incredibly sharp, Shun Classic knife blades feature a 16-degree blade angle making each blade much sharper than traditional western knives. Crafted in Seki City Japan, Shun Classic knives are forged in the tradition of samurai sword making and are known world-wide for their incredible edge-retention. Each blade core features Shun's proprietary high-performance VG-MAX steel, which provides incredible edge retention, and is clad with 34 layers each side with Damascus stainless steel, then ground and bead-blasted, revealing the flowing pattern of the layered steel. The ebony D-shaped Packwood handle has that sleek, sophisticated look that makes these knives feel more like art, than instrument. The D-shape fits naturally in the hand, for a comfortable grip, regardless of the length of the cutting task at hand. I have had the Shun Santoku for about 9 years. I have a lot of other quality knives in the same price range, but I found myself using the Santoku all the time. I recently added the Asian chef and Western chef knife to my Shun collection. As expected they are as delightful to use as they are beautiful.I would add a couple of warnings.1. Handle with care, they are really really sharp and cut so effortlessly.2. They need special care, and it is well worth investing the time to learn how, and the money to get the right tools. The wrong sharpener will damage the knife.
