Upping my review by one star because these knives cut a 2 inch thick medium rare steak like it was butter. These knives are the Gourmet version of Wustoff Classic knives. They are not full tang which disappointed me. The piece near the blade should have tipped me off that they have a partial tang which doesnt go all around the edge of the handle. The polycarbonate handle is also different from the original series, other purchases mentioned it stains. The blades have the Wustoff logo, are high carbon stainless and are able to be sharpened easily. I prefer the excellent quality of the Classic knives. However, they are an excellent value when you compare the pricing because the Gourmet costs significantly less.
